Juicy Minty Watermelon

I. Love. Summer. You got the sunshine, beach days, and FRUIT. No lie, watermelon is probably my favorite fruit. I used to eat half a watermelon a day (don't judge) and I love bringing it as a side dish when I go to summer bbq's. 

Watermelon is extremely hydrating because of the high water content, making it perfect for a refreshing snack after a day in the sun. The added mint adds in the cooling effect. So simple and delicious, try it out next time you're looking for a quick dish to share!

Ingredients:

  • 1 whole watermelon
  • 4 mint sprigs

To make:

  1. Cut up watermelon in bite size chunks
  2. Chop up mint and mix in with watermelon
  3. Chill in fridge until ready to serve

Told you it was ridiculously simple! Healthy eating doesn't have to be complicated. ;)
